UPDATE (DECEMBER 12, 12:23 P.M. ET): Bravo's Top Chef head judge and eight-time James Beard award winner Tom Colicchio is set to open his newest restaurant, Small Batch, on December 12 at Roosevelt Field in Garden City, Long Island.

With a focus on local sourcing and top-end hospitality, Small Batch will celebrate Long Island, where its owner lives. The 180-seat farmhouse-inspired space will serve rustic American fare, prepared in an open-concept kitchen with a wood-fire grill as its centerpiece. A New York-focused beverage program will include about 100 bottles of wine, each under $100.

Small Batch is Crafted Hospitality's first new concept in two and half years. 

"Small Batch will go beyond being a great dining destination," the chef said in a statement. "Small Batch will connect with and support the Long Island food community; we will be the table where purveyors, cooks and guests can come together to celebrate a way of doing business that will create better food for all of us."

Bravo's Top Chef is heading to Kentucky for Season 16 when it premieres Thursday, December 6 at 9/8c — but that's not all that lead judge Tom Colicchio has up his sleeve for the coming weeks.

He's also gearing up to open a new restaurant — and this one is going to be a bit different from the others in his empire. That's because it will be his first restaurant not located within a big urban area: The new eatery, known as Small Batch, is set to open next month in Garden City, New York.

The concept focuses on locally sourced and seasonal ingredients in rustic American fare with an approachable feel. "The culinary and beverage teams will work closely with members of the Long Island community to celebrate the world class products coming from local farms, fisheries, vineyards and more throughout their offerings," according to the website.

The 180-seat restaurant will have a farmhouse-inspired vibe with an open and interactive kitchen and wood-fired grill — all meant to bring the chef action into the dining room.

Tom also just announced a partnership in an affordable, chef-quality cookware line... and he's using it in all his restaurants.
